today is National Pie Day.
did you know that?
have you ever heard of it?
It is always on the 23rd of January.
always.

i dream of pie:
coconut cream pie like my mother made
with meringue piled 2" high on top, and sprinkled
with coconut shreds all brown from the broiler.

or a sweet/tart apple pie with lots of sugary juice,
a flaky crust that forms layers, still warm from the oven,
with a huge scoop of vanilla ice cream!

or a banana cream pie in a graham cracker crust.
Yummmmm
