january 23rd is
National Pie Day.
i wanted to post a recipe for
judy's aunt bernice's
walnut pie.
unfortunately i could not get
in touch with her (in a timely manner)
and so i checked the internet
for walnut pie recipes.
while looking through the
similar recipes, i came across this
"hedonistic" (that was the description....
honest!) chocolate walnut pie.
when judy calls me, i will compare
the ingredients (minus the chocolate)
and share her recipe....i've eaten lots of it,
so i know it is good.
wish i had one today.
if you are fortunate enough to get some pie today,
have an extra piece for me!
just heard from judy....the ingredients are
similar, with her recipe calling for
1/2 C. corn syrup,
no vanilla,
and 1 C. walnuts.
she wanted me to be sure to mention that
in her experience
margarine is preferable to butter.
Chocolate Walnut Pie
- 4 ounces semisweet chocolate
- 1 unbaked 9-inch pie crust made fromBasic Pie Pastry
- 3 large eggs, lightly beaten
- 1 cup light corn syrup
- 1 cup sugar
- 2 tablespoons (1/4 stick) butter, melted and allowed to cool
- 1 teaspoon vanilla
- 2 cups broken walnuts
Preheat the oven to 350°F.
Melt the chocolate in the microwave or in a heavy pot on low heat. Pour it evenly into the unbaked pie shell.
In a large bowl, mix the eggs, corn syrup, sugar, butter, and vanilla well. Stir in the walnuts. Pour the mixture into the chocolate-lined pie shell and bake until the filling is set, 45 to 50 minutes. Remove to a rack and let cool.
The pie may be made ahead several days, or frozen for up to 3 months. Serve with whipped cream if desired.
